Help, Mom! (College Kid Cries for Culinary 911)

I have two kids in college.  My oldest (a boy) has just turned 23.  My daughter is a new freshman.  One thing I did not do for them while they were at home was force them to learn how to cook.  I am now reaping the consequences of this sin of omission.  My son called me about a week or so ago (okay, closer to the "or so" part than an actual week - more like 2-3 weeks), and he asked me if I could help him.  He wanted some recipes that he could make, along with a shopping list for the week.  Now, as most of anyone who's been to college knows, being frugal with your money is essential.  I think it's important to know that I don't really do fast food.  I want my children to eat healthy and eat food that is in it's most natural state (non-processed).  With all of the stress of college, eating healthy is so very essential.  So, I began to think about cooking and how I cook and the most budget friendly way to cook.  But in addition to recipes, I think it's important for him (and my daughter too) to learn the intuitive part of cooking.  More important, I felt that my children probably aren't the only ones in this situation, so why not record all of the things I send to them and post them on a blog?  I hope that you (or someone you know) will find these tips/recipes/lessons helpful.  Please let me know.  I appreciate your comments.  Sincerely, Gigi.
